Baked Eggplants with Garlic and Herbs Recipe

Ingredients:

  • 2 medium eggplants
  • 4 cloves garlic, minced
  • ¼ cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • ¼ cup grated Parmesan cheese (optional)
  • Fresh herbs for garnish (parsley or basil)

Instructions:

  1. Preheat the oven:

    • Preheat your oven to 400°F (200°C).
  2. Prepare the eggplants:

    • Slice the eggplants in half lengthwise. You can score the flesh in a crisscross pattern to help with cooking and flavor absorption.
    • Sprinkle the cut sides with salt and let them sit for about 30 minutes to draw out excess moisture and bitterness. Rinse and pat dry with paper towels.
  3. Make the garlic and herb mixture:

    • In a small bowl, combine the minced garlic, olive oil, oregano, thyme, basil, salt, and pepper. Mix well.
  4. Assemble the dish:

    • Place the eggplant halves cut side up on a baking sheet lined with parchment paper.
    • Brush the garlic and herb mixture generously over the flesh of each eggplant half.
    • If using, sprinkle the grated Parmesan cheese on top of the eggplants.
  5. Bake the eggplants:

    • Bake in the preheated oven for about 25-30 minutes, or until the eggplants are tender and golden brown.
  6. Serve:

    • Remove from the oven and let cool slightly. Garnish with fresh herbs before serving.

Enjoy your flavorful baked eggplants with garlic and herbs! They can be served as a side dish or as a main course.
